Beef Ramen Noodles

I cannot believe how that we stumbled upon something so dang delicious and it's Keto!! So I made us spaghetti & meatballs for the week and Ray mentioned something about the noodles tasting like Ramen. I thought to myself, they sure do, what can we make. I kept thinking a play on egg drop soup, whereas Ray was like NOPE, beef noodles! I was all in. The recipe is for two individuals, double or triple as needed. We plan on making this a LOT, so I hope that you all enjoy this recipe.



Secrets:

- Buy a Filet Mignon (so much flavor).

- If you forget beef stock, the chicken stock will work. Or make a stock with two chicken bullions plus water.

- Poaching eggs are fun, but watch a video if it's your first time.



Ingredients


· 1 – Pack Konjac Noodles

· 2 – Packs beef Noodles (Nissan or Maruchan), SEASONING PACKETS ONLY

· 1 – Steak

· 1 – Poached Egg (How To)

· ¼ tsp Montreal Seasoning

· 2 cups Beef Stock (or Chicken Stock)

· ¼ cup Green Onions


Instructions


1. Preheat the oven to 375

2. Place two cups of beef stock into a pot over low heat & set aside.

3. Seasoning the steak with the Montreal seasoning.

4. Cook it until seared on both sides (about 2 mins per side).

5. Place the steak in the oven to finish at the desired temperature.

6. Take the Konjac noodles out the pack, strain the water, and rinse under clean water for two minutes.

7. In a clean pan, set to medium-high, place the freshly washed Konjac noodles inside.

8. Add the Beef Ramen Noodle Seasoning. Stir well and let simmer for a minute. Kill the heat.

10. Pull your steak out of the oven and let rest for at least 5 minutes. Slice when cooled.

11. Build your ramen bowl. First, add the noodles, then one cup of broth, add steak slices, poached egg, and then sprinkle a few green onions over top.
