Low Carb Cauliflower Au Gratin

Holy Cow! Giving up carbs doesn’t mean sacrificing taste. Here is a simple, yet quick recipe for a Cauliflower Au Gratin that will have your family questioning “why haven’t we had this sooner?” Pair this side with any protein or have it all by itself.

Ingredients
· 1 head cauliflower cut into small to medium pieces
· 1 small onion Julienned
· 2 tablespoons butter
· 4 tablespoons King Arthur Keto Flour
· 1/2 cup heavy cream
· Adobo (or salt) & Pepper to taste. [About 1 – 1.5 tbsp is recommended]
· 1 cup Mozzarella Cheese
· 1 cup Gruyere Cheese
· 1 cup Cheddar (1/2 for the cheese sauce & ½ for the topping)
Instructions

1. Set your oven to Low Broil.
2. Clean and trim the cauliflower, slicing it into small – medium pieces. Place this in a dish for the oven.
3. Add 2tbsp of butter to a saucepan (medium low heat). Once melted, add the onions & Sautee until translucent.
4. Then add in your Keto Flour & whisk.
5. Add in your heavy cream, seasonings and stir until your cream is warm.
6. Add in all of the cheese & stir. The mix will be thick!
7. Once cheese is mixed & your sauce is to your taste, pour it over the cauliflower.
8. Place the Cauliflower in the oven for 20 minutes or until for tender.
9. Add the remaining Cheddar on top & cook until Cheddar is golden brown.
10. Remove from oven, cool & serve!
