Buffalo Chicken Wings

I’m loving the idea of being able to fry, oven fry, air fry, or grill chicken on Keto! One of my favorite meals (and these get eaten weekly) are chicken wings. By pure mistake, I added baking powder to some chicken wings, and it created a crispy skin for me. The baking powder is tasteless and also carb-less! This recipe is simple yet so delicious. I’ve given you all the wonderful coated Oven fried chicken wings. Now I’m sharing with you all some buffalo wings, the Keto way!

Ingredients
· 4 to 5 lbs of fresh chicken wings (or frozen, just thaw)
· 1 lrg bottle of hot sauce (Sweet Baby Ray’s Hot Sauce, Franks Red Hot…)
· 2 tbsp baking powder
· 1 stick of unsalted butter
· 1 habanero, seeded & quartered (optional)
Instructions
1. In a large bowl, toss your chicken wings in baking powder.
2. Line a cookie sheet with foil and place wire cooling rack on top. Add your chicken. (This will make sure your chicken gets crispy) Bake in a 350 degree oven for about 30 minutes until golden and crisp – longer if you like them really crispy.*
3. Meanwhile in a medium saucepan melt the butter and add the entire bottle of hot sauce as well as the habanero, if using. Simmer over low heat while the wings are in the oven.
4. Remove wings from the oven and dump into the sauce, toss until well coated. Take them out and put them back on the cookie sheet – back in the oven for another 30 minutes or more.
5. If you love them really saucy you can repeat this step. Or if you are cooking them for a party later, refrigerate the sauce and wings and then re-dunk and blast for 20 minutes in the oven right (375 F) before your guests arrive.
6. Serve with lots of celery sticks and good quality ranch! Nom, nom, nom!
