Cheesy Cauli Mashed

I’ve said this before, but I’m so glad that cauliflower is so versatile! I’ve made street corn, mashed potatoes, sushi, grits and many other cauliflower dishes! It’s such a wonderful vegetable that you can build a meal from, just like a potato. Often times, I forget that I’m eating a vegetable when I make cauliflower mashed! I hope you enjoy this recipe just as much as I enjoyed making it.

Ingredients
· 1 head of fresh cauliflower (frozen is okay)
· 2 Tbsp heavy cream
· 1 Tbsp butter
· 2 ounces your favorite sharp cheese
· salt and pepper to taste
Instructions
1. Clean and trim the cauliflower, breaking it into medium sized pieces.
2. Bring a pot of water to a boil, add salt.
3. Cook Cauliflower until fork tender (about 10 minutes). Drain water, return cauli to pot.
4. With the temperature on medium to medium low, add 2 Tbsp of cream and 1 Tbsp of butter.
5. Stir to coat cauliflower with cream/butter mixture.
6. Turn off stove. With a hand blender or mixer (like a ninja) puree until smooth.
7. Season with salt and pepper to taste. You can adjust the cream and butter to your preference.
