Broccoli Cauliflower Casserole

If you've ever been to Cheddar's Causal Cafe, you know that they have pretty much the BEST Broccoli Casserole. You would also know that it is made with RICE! Guess what? I was itching for something like this so I decided to explore. My talents did NOT offend my taste buds. I will be making this at least once a month. See the recipe below.



Ingredients


Produce

· 1 lb broccoli florets

· 1 head of cauliflower (grated into rice)


Baking & Spices

· 1 10 oz can Cream of chicken soup, condensed

· 1 yellow onion small

· 2 cloves garlic

· 1 cup mayo (Real Mayo Brand)

· 1 tbs salt

· 1 tbs pepper


Dairy

· 3 tbs butter, non-salted

· 1 ½ cups shredded cheddar, medium or sharp

· ½ cup of Gouda shredded cheese

· 1 cup Heavy Cream

· ¼ cups sour cream

· 2 Eggs, Large



Instructions


1. Preheat oven to 350 degrees and grease a casserole dish (9X13-inch).

2. Rough chop your broccoli. Grate your cauliflower into rice like grains (or throw in food processor).

3. Boil broccoli in salted water for 3 minutes, drain and place to side.

4. Melt butter in a Dutch oven over medium heat and add onion. Cook 5 minutes. Add garlic, cook for another 2 minutes.

5. Mix in Condensed soup, mayo, sour cream, and heavy cream until saucy.

6. Add your cauliflower rice & eggs to the mix and stir.

7. Once blended add the 1 cup of shredded cheddar & ½ cup of Gouda until melted and gooey.

8. Add broccoli & pepper.

9. Spoon into prepared dish, cover with aluminum foil. (Spray foil with cooking spray so it doesn't stick to the food.)

10. Place in oven for 30 minutes.

11. Remove foil, sprinkle remaining cheddar cheese on top and leave in oven for another 10-15 minutes.
