Cheesy Chicken Enchiladas

Cheeeeeesy Chicken Enchiladas! I don't think that there is anything else I can say. I hear individuals say that they have no variety in low carb choices. This meal is SUPER easy and quick to make. In thirty minutes, you can have a dedicate meal that is addicting. I hope you enjoy this just as much as I did. Please watch the video below for instructions. If you don't like chicken, you can always substitute the meat of your choice! Just make sure that it is cooked.

Ingredients
· 2 Chicken Breast (Cooked)
· 1 Cup Chicken Broth (Saved from cooked chicken or store bought)
· 4oz Cream Cheese
· 2 Cups of Cheddar Cheese
· 1 – 24Oz Container of Chunky Salsa
· Seasoning Blend (1tsp of each) [Salt, Pepper, Garlic Powder, Onion Powder]
· Cilantro for Garnish
Instructions
1. Preheat oven to 350 ˚ F
2. Shred or cut your chicken breast into fine pieces
3. Add the cream cheese, chicken broth, Seasoning blend and mix.
4. In an oven pan, line the bottom with chunky salsa mix.
5. Take your tortilla, fill it with the cream cheese chicken mix. Roll the tortilla & place it in the pan.
6. Roll as many as you can fit.
7. Top the tortillas with Salsa & Cheddar Cheese.
8. Bake in the oven for about 10 – 15 minute until the tortillas are brown and the cheddar is melted.
