Cinnamon Squares

Hey Keto Family! I crave a LOT of sweet items and definitely have a hard time finding amazing substitutes. Today, I bring you cinnamon squares, even though I want to call it a cinnamon roll, but I don't roll it! This reminds me of what my parents used to make me, "cinnamon toast." It was toast with butter, a sprinkle of cinnamon, and sugar spread. MAN was that the best snack I ever had? I'm so thrilled to provide a low carb option for your cravings! *Note* I prefer almond flour over coconut. If you are the same, there is a almond flour substitute below as well. All you do is replace the Coconut flour with the almond flour amount & reduce an egg.
Dough Ingredients
· 1/3 cup coconut flour
· 2 tbsp Swerve Confectioners
· 1/2 tsp baking powder
· 1/2 tsp cinnamon
· 1/8 tsp salt
· 1 1/2 cups shredded mozzarella cheese low-moisture and part-skim
· 2 tbsp cream cheese
· 2 large eggs, slightly beaten
· 2 tbsp heavy whipping cream
Almond Flour Substitute
· 3/4 cup Almond Flour
· 1 large egg, slightly beaten
Topping Ingredients
· 3 tbsp butter melted
· 3 tbsp Swerve Brown
· 2 1/2 tbsp Swerve Confectioners
· 1/2 tsp cinnamon
· 1/8 tsp vanilla extract
Instructions

Dough Instructions
1. Preheat oven to 425 F and line a baking sheet with wax paper, or a non-stick silicone baking mat.
2. Combine coconut flour, Swerve Confectioners, baking powder, cinnamon, and salt in a small bowl and set aside.
3. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 45 seconds on high, then remove and stir. The mixture will not be fully combined at this point, but make sure to spread out the cream cheese as much as possible.
4. Return cheese and cream cheese to the microwave for another 45 seconds. Remove and stir again, fully combining the mixture.
5. In a large bowl, combine the eggs, whipping cream, and flour mixture. Then add the cream cheese/cheese mixture and knead with your hands until a dough forms. (If the dough starts to stiffen, microwave again for a few seconds.)
6. Place it on your lined baking sheet and roll it out into a rectangle, 1/3” thick. (The best way to roll the dough out is to place a piece of wax paper - wax side down - or a non-stick silicone baking mat on top and then roll it with a rolling pin.)
7. Bake for 6 minutes. Remove from oven and set aside.
Topping Instructions
1. Combine melted butter, Swerve Brown, Swerve Confectioners, cinnamon, and vanilla extract. Brush on top of the bread, coating the entire surface.
2. Return to oven for another 2 minutes.
3. Cool for at least 15 minutes before cutting into 8 pieces.
