Snickerdoodle Cookies

I'm so excited to introduce this recipe. I’ve been having a hankering for all types of sweets lately & of course on Keto it gets a bit harder. Last night, I tried a BEAUTIFUL Snicker Doodle recipe that did two things: 1. Gave me amazing cookies, 2. Tricked me into thinking that I was on a diet again! These cookies are so delicious that you wont mind them being low carbs. In fact, you won’t miss the carbs! I would recommend that you wear gloves when mixing (it just makes that whole process a bit easier). Also, I found that these cookies spread like heck. I would make 24 instead of 12 large cookies.

INGREDIENTS


· 8 tbsp softened (sit it on the counter for at least 2 hours)

· 1 tsp vanilla

· 1 large egg

· 2 cups blanched- fine almond flour

· 1 tsp baking soda

· 1 tsp cream of tartar

· 3/4 cup Truvia

· 1/2 tsp salt

· 1 tbsp cinnamon- separated in half


Cinnamon Sugar Outside

· ¼ Cup Truvia

· 1 tbsp Cinnamon



INSTRUCTIONS


1. Preheat oven to 350

2. In a large mixing bowl- Cream butter, egg and vanilla together until soft and fluffy.

3. Sift together ALL remaining ingredients.

4. Mix those together in a small separate bowl and reserve for rolling.

5. Mix dry into wet ingredients just until combined. Do not over mix, the butter will get too warm and the cookies will fall flat.

6. Scoop and roll into 2-3 in balls. Roll in cinnamon sweetener mixture. Place on greased cookie sheet.

7. REFRIGERATE for 5-10 min.

8. Bake 10 minutes or until golden and set up.
