Breakfast Hash

For a long time, on Keto I searched for a potato option! Potatoes, and pasta are generally the only things I miss while I'm on the keto diet. I'm here to tell you that now I've completed my mission, in other post, I provide a pasta substitute that is BOMB. I'm now giving you hash browns that you wont think twice about! These turnips roots diced and paired with bacon and the poached egg is PERFECTION. Enjoy, and let me know if you love it!



INGREDIENTS


· 1 large turnip peeled and diced

· 1/4 onion diced

· 3 slices bacon

· 1 Poached Egg (Or Fried)

· 1 tablespoon avocado oil

· 1/2 teaspoon each of paprika, garlic powder, salt, and pepper

· 1 green onion sliced, for garnish

· Parsley for garnish


INSTRUCTIONS


1. Add the oil to a large skillet over medium high heat. Add in the turnips and spices. Cook 5-7 minutes stirring occasionally.

2. Add in the onion and cook 3 minutes until it starts to soften. Chop the bacon into small pieces and add to the skillet. Continue to cook another 5-7 minutes until the bacon is crispy.

3. Top with Poached egg, green onion & parsley before serving.
