Loaded Cauliflower Mashed Potatoes

So, #confession, I am the biggest fan of a good Russet Potato. I like it with all the fixings as well: Butter, Sour Cream, Bacon, Green Onions; the kitchen sink lol. With Keto, comes some slight changes to your meals. This has to be the biggest, but one of the best changes. I call this faux mashed because I really can't taste the difference.

Cook Time 15 minutes

Total Time 25 minutes

Servings 4 servings


Ingredients

  • 1 large head cauliflower cut into large pieces

  • 1 clove garlic

  • 3 T butter or olive oil

  • ½ t salt

  • 1/8 t pepper

  • 1 T sour cream

  • 4 slices cooked bacon crumbled

  • Green Onions finely chopped

  • Cheese shredded

Instructions

  1. Boil a large pot of water. Place cut cauliflower into boiling water, reduce to a simmer and let cook for 8-10 minutes.

  2. Drain water from cauliflower. Pat cauliflower completely dry.

  3. Add cauliflower to a food processor, or high-powered blender, with garlic, butter or olive oil, salt, pepper and sour cream.

  4. Process for 2 minutes, scraping the sides of the bowl every 30 seconds.

  5. Serve mashed cauliflower while still warm. Top with bacon crumbles, green onions and cheese and enjoy!
