Skillet Chicken Fajitas

Running low on time? Perfect this is the recipe for you. I absolutely LOVE Fajitas and I'm UBER excited that I found low carb tortillas to finish off this meal. If you are carb-conscious stick to the lettuce wraps or nothing at all! You can change out the spices if they are not your forte. Other than that, enjoy! Let me know in the comments how you feel.



Ingredients


· 1 lb chicken sliced thinly

· 1 red bell pepper sliced

· 1 yellow pepper sliced

· 1 medium size onion sliced

· 2 Tbsp olive oil divided

· 1/4 cup chicken broth


Spices for Fajita Mix:


· 1 tsp dried oregano

· 1 tsp chili powder

· 1/2 tsp salt

· 1/4 tsp garlic powder

· 1/4 tsp ground cumin


· flour tortillas optional

· lettuce wraps optional



Instructions


1. Heat skillet over medium-high heat with 1 Tbsp Olive oil.

2. Add peppers and onion, saute until tender(about 5-7 minutes).

3. Remove peppers and onions to plate.

4. Add remaining olive oil and chicken.

5. Saute until chicken is no longer pink and done; about 8 minutes.

6. Add spices and chicken broth, bring to a boil then turn to simmer.

7. Add peppers and onions back to skillet.

8. Heat for about 3-5 minutes.

9. Serve immediately.
